History of Business: Years in the making, Earl’s Cut Meats & BBQ opened its doors on April 2.

Husband and wife Earl and Marilyn Stapp long wanted to get into the restaurant business, but differed on the particulars. Meredith wanted a bakery, but Earl “being an Okie” wanted to open a barbecue restaurant. Unfortunately, Meredith was diagnosed with cancer, and Earl himself passed before his dream restaurant could open.

Their son, Keith Stapp, carried on his parents’ vision by opening Earl’s Cut Meats & BBQ in downtown Denair. He’s aided by longtime caterer and barbecue guru Jamie Kincaid.

Business specialty: Earl’s specializes in true, authentic barbecue.

“Everything here is homemade, and made from scratch,” Kincaid said.

The brisket is smoked for 12 hours; the pulled pork, for 15. Also on offer are roast turkey, pastrami, and roast beef.

Kincaid recommends the chipotle brisket to newcomers, available as a sandwich or a plate meal with choice of side.
